Emailing from within PS

We are 2 months into PS usage and I have a couple of questions:

Is there a way to set up email groups within PS?
Is there a way to change the default email from outlook to Gmail?
Can a form be created and used in PS to allow parents to enter their volunteer hours that will keep a running total?

I am not sure of my coding and customization at this point as I am still in the early stages.
